14 cups sifted flour
1/3 cup sugar
2 tsp baking powder
3/4 tsp salt
1 egg, beaten
1/4 cup shortening, melted
1 cup pineapple juice
Pineapple Topping:
1/2 cup sugar
1 tsp ground cinnamon
1 tbsp butter or margarine
1/3 cup crushed pineapple, drained
Sift together flour, sugar, baking powder and salt. Combine egg, shortening and pineapple juice. Mix liquid and dry ingredients; beat until smooth. Spread in 8 – 9″ greased pan; sprinkle with pineapple topping mixture. Bake at 350° F for 35 minutes or until cake shrinks from side of pan. Cool slightly before serving — about 10 minutes. Makes 10 servings of Pineapple Coffeecake.
