1 tsp unflavored gelatin
1 tbsp cold water
1 cup milk
4 cup cooked drained pineapple
1 tbsp lemon juice
1/3 cup sugar
1/8 tsp salt
2 tsp pure vanilla extract
1 cup heavy cream, whipped
Soften gelatin in cold water. Dissolve over hot water and add milk slowly. Add pineapple and lemon juice. Add remaining ingredients except whipped cream. Mix and chill. Beat thoroughly and fold in whipped cream. Freeze in refrigerator tray. Serves 6-8.
